In the summer, we are overloaded with fresh veggies.
One of those veggies being zucchini.
The other night I threw together a dish that was so yummy!
Slice 4-5 zucchini into little sticks.
Place sticks in baking dish.
Add tiny pats of butter throughout the mound of zucchini.
Pour Kraft Parmesan cheese all of the zucchini.
Bake covered on 350 for about 30 minutes or until zucchini is tender.
Uncover and broil until cheese is crispy and brown on top.
Super easy and super yummy!
** For a less fat, use EVOO instead of butter. ;-)

Meredith's Chick Roll-Ups.
I took Meredith's recipe and added a few things to it. It is delicious!
Ingredients
- 4 chicken breasts
- 8 oz. cream cheese
- 1 can cream of chicken soup
- 1/2 cup shredded cheddar cheese
- 2 cans crescent rolls
- Melted butter
- Bread crumbs
Directions
Season chicken. Cook on the frying pan until done.
Cut chicken into small pieces.
Mix cream cheese, chicken soup, chicken and cheddar cheese in bowl. Mix well.
Place a big scoop of chicken mixture on open crescent roll. Close each roll and make sure there are no big holes in the rolls.
Roll the crescent roll in melted butter and then roll in bread crumbs.
Place on a cookie sheet and bake on 400 degrees for about 10 minutes or until crescent rolls are golden brown.
You can also throw together some gravy by using another can of cream of chicken soup. Add milk until the gravy is as thin as you want. Add salt and pepper. This is great on top of the roll-ups.

Bean Dip
This is a recipe I got from my best friend's mom.
Ingredients:
1 lb ground hamburger
1 small onion chopped
1 package taco seasoning mix
1 jar picante sauce or salsa – medium
Salt & Pepper to taste
Texas Pete to taste
1 8oz cream cheese
1 16oz sour cream
1 can bean dip (Frito Lay brand) or jalapeno bean dip (food lion brand)
1 bag of shredded Montera Jack & Cheddar cheese (at least 2 cups)
Directions:
1. Brown the hamburger with the chopped onion until done. Season with salt & pepper.
2. Drain any excess grease from the hamburger.
3. Add the taco seasoning mix with approriate amount of water (the back of the taco seasoning pack will tell you how much). Add Texas Pete to taste.
4. Mix the cream cheese, sour cream and bean dip together well.
5. Spread half of the cream cheese mixture on the bottom of a lightly greased baking dish. Spread half of the hamburger mixture on top of the cream cheese mixture. Sprinkle a layer of cheese on top of the hamburger mixture.
6. Repeat the layering ending up with the cheese on top.
7. Bake at 350 until cheese is melted. 20 – 30 minutes.
Serve with Frito Scoops.
